/About Us

Our Story

We are two brothers living in Madison, WI and competing in KCBS sanctioned barbecue contests. We grew up in Texas, but didn’t catch the barbecue bug until our mid-20’s. The fun started with friendly competitions between us at backyard parties, but we joined forces in 2008 and started competing against some of the best teams in the country. We have competed in Wisconsin, Minnesota, Michigan, Missouri, Iowa, Indiana, and Tennessee.

/Competition BBQ

We compete in barbecue competitions that are sanctioned by the Kansas City Barbecue Society (KCBS). In a KCBS competition, each team cooks four categories, chicken, pork ribs, pork shoulder, and beef brisket. We strive to turn in six pieces of chicken that look alike and all pack a lot of flavor. We’ll turn in six-ten of the best ribs on the planet. Our pork shoulder entry will showcase pork three ways, sliced, pulled, and chunked. The brisket box is packed with eight to twelve 1/4″ slices of brisket along with six to ten of the absolute best bites of barbecue period, the burnt end. All told we’ll spend 24 hours trimming, rubbing, smoking, mopping, glazing, and boxing the most flavorful meat to satisfy six judges and try to beat 30, 40, sometimes 500+ other teams for the title of Grand Champion. We have a lot of fun doing this, but don’t be fooled, we are there to win. Here are some sample boxes we’ve turned in in the past.
